Why is grease soluble in gasoline but not in water?

It is not water soluble. Different things need different solvents to dissolve them. Latex paint is water soluble but Enamel or Oil based paint is not and needs a petroleum product like white spirit or turpentine to dissolve it. Fingernail polish and other lacquers require acetone.
