I have a empty bottle of rum that I started to fill with beer caps. It now smells like maple syrup. Why? ?

It was a bottle of Bacardi Grand Melon that we have started to fill up with beer bottle caps and it is smells like maple syrup. It has been going for two or three months now and none of us can think of why. Does anyone have an insight?
